It's a perfect mix between paper notes and typing. So I don't take notes on an iPad, but I have also wondered whether or not to convert to taking notes on the iPad. I know other people use OneNote because it's easy to transfer typed material from ipad to laptop, other people use notability which is almost like goodnotes but has a different set up.
